Snapper to Grill or Barbecue

As many snapper as you need (scaled & gutted)
Ginger, julienned (to your taste but not too much)
Finely chopped garlic (don’t use too much)
Chilli, finely chopped (don’t use too much)
1 tablespoon finely chopped lemongrass stem
1 tablespoon chopped coriander root
Juice of 1 lemon
½ cup light soy sauce
Sea salt
Cracked pepper
  • Place 3 incisions into the flesh of the fish on both sides
  • Tear off 4 large pieces of foil
  • Place the fish in the middle of the foil with the other ingredients and seal the foil like an envelope
  • Place the parcels onto a barbecue for 5 minutes & then turn over for another 5 minutes
