1 cup of chopped onions 2 cloves of garlic 1/2 tsp. of dried oregano 1-1/2 tsp. of kosher salt 1-1/2 tsp. of freshly ground black pepper 2 cups of diced carrots 1 cup of medium diced boiling potatoes 1 lb. of dried split green peas 8 cups of Swanson 100% fat free chicken stock
Directions: In a pressure cooker (with top off) heat the onions, garlic, and seasonings with 4 tblsp. of the chicken stock (instead of oils). When the onions are translucent, add the rest of the ingredients and the remainder of the chicken stock. Seal cover on the pressure cooker and set on whatever timer you have that equates to 10 minutes. Let the pressure reduce gradually when done. Take the top off and place the soup in a blender and blend until smooth. Tastes great and freezes well also. Hearty soup, very little fat (maybe 1 or 2 grams of unsaturated fat per serving - from potato).
