Broccoli Pasta (Tony and Gaik)


This is a classical Italian. 
  • 500 g pasta (spiral are good)
  • 4 large heads of broccoli
  • 1/2 to 1/4 cup of olive oil (sound like a lot but recipe will not work without this quantity)
  • 4 big cloves of garlic (I use less!)
  • 4-5 tsp chopped hot chili (can use a combination of dried and fresh)
  • Salt and peeper to taste

Cut broccoli into smallish chunks. Steam with garlic and chili until soft enough to mash but still crunchy. Cook pasta, drain and add broccoli mix with 1/4 of the oil. Stir well and slowly add the remaining oil. Add salt (which brings out the taste of broccoli) and lots of freshly ground black pepper.
