Bean and Vegetable Creole Salad (Sandra Manessis)

1 onion, thinly sliced
200gm (french)beans, trimmed.
2 courgettes, trimmed and sliced into 11/2 cm rounds
8 spring onions, in short lengths
400gm haricot beans (I use tinned organic ones.)
400gm cannelloni beans
400gm tin chickpeas
250gm cherry tomatoes
Parsley and coriander
Creole Spice Mix:
11/2 tsp paprika, basil and thyme
Pinch of cayenne pepper or chilli powder
Place onion in water and cook for 6-8 minutes. 
Combine ingredients for spice mix. Add to pan and stir for 1-2 minutes
Now tip the beans, courgettes and spring onions into pan and cook for 6-8
minutes. Let the mixture cool and then add tinned beans and cherry tomatoes.
Stir in chopped parsley and coriander. Serve at room temperature.
